Chimichurri sauce is perfect with just about anything: chicken, fish, lamb, salads, roasted vegetables, wild rice, and anything else you can think of. Originating from South America, this sauce is similar to a pesto, but parsley is the base of the recipe instead of basil. Typical ingredients also include garlic, vinegar, oil, and oregano — all part of the delicious chimichurri sauce recipe below. Kids will love dipping veggies in this antioxidant-rich spread that’s also anti-inflammatory and high in vitamin A and C. Makes 1 and 1/2 cups
Chimichurri Sauce Ingredients:
1 cup packed flat-leaf parsley, stems removed
1/4 cup fresh oregano leaves
3 garlic cloves, peeled and roughly chopped
1 small jalapeño pepper, seeds removed and chopped
2/3 cup olive oil
1/4 cup apple cider vinegar
1 teaspoon sea salt
1/2 teaspoon smoked paprika
Directions:
Chop parsley, oregano, garlic and jalapeño (remove seeds).
Mince them well by hand (with a very sharp knife) or add them to the bowl of a food processor and pulse until the ingredients are minced.
Transfer the garlic and herb mixture to a shallow bowl (your choice of shape and size) and mix in the olive oil, vinegar, salt, and smoked paprika. Adjust seasoning to taste.
