Pineapple Avocado Gazpacho Recipe

Rich in Enzymes
Every well-presented dish must have a garnish, and this pineapple avocado gazpacho is no different. This recipe calls for either sprouts or cilantro as the finishing touch. Sprouts are rich in enzymes and contain a good level of bioavailability, which allows the body to easily absorb the nutrients the sprouts contain. Sprouts also contain prominent levels of fiber, which is helpful for improving digestion.

- 2 cups of diced pineapple
- 1 diced avocado
- ½ teaspoon of sea salt
- Juice of 1 lime
- Garnish: sprouts or cilantro
Step 1: Combine all the ingredients except the garnish of your choice.
Step 2: Blend half of the mixture.
Step 3. Pour the blended mixture back into a bowl and fold into the unblended portion of ingredients.
Step 4: Add ½ a cup of water if you’d prefer a thinner texture.
Step 5: Serve the gazpacho chilled and garnish with either cilantro or sprouts.
