Let’s be real here, we all want the option to enjoy some dessert. But can we have dessert on the keto diet? The answer is yes … if we know which ingredients to use. This Lemony Keto Pound Cake recipe has only a few ingredients and is totally gluten-free, sugar-free, low carb, and dairy-free.

What is the goal of keto?

The goal with the keto diet is not to starve ourselves of food or calories, but to starve ourselves of carbohydrates. Generally, individuals on the keto diet aim to eat 60 to 75 percent of calories from fat, 15 to 30 percent of calories from protein, and 5 to 10 percent of calories from carbohydrates. It’s possible to combine the 21-Day Clean Program with the ketogenic diet to fit your individual goals and needs. The Clean Program and the ketogenic diet share the foundation of focusing on whole foods, vegetables, healthy fats, and high-quality protein sources while eliminating most processed foods.

Can you eat dessert on low-carb diets?

The keto diet is known for being a low-carb, high-fat diet that helps burn excess body fat, increase energy, and enhance mental and physical performance. By significantly lowering our intake of carbohydrates, the body is put into a state called ketosis. Ketosis is a natural metabolic state our bodies initiate to help us survive when food is scarce. During ketosis, the body is forced to burn stored fat for fuel rather than carbohydrates.

Since this Lemony Keto Pound Cake recipe has only a few ingredients and is totally gluten-free, sugar-free, low carb, and dairy-free, it’s on point for a keto-friendly dessert option. It’s higher in protein to increase satiety, without being too high in protein, kicking us out of ketosis. It’s also higher in fiber, helping to stabilize blood sugar levels and support a healthy gut.

The best part – it’s healthy enough for breakfast and decadent enough for dessert.
*Note: This cake does include eggs, so if you are on the 21-Day Clean Program and are excluding eggs, it’s best to avoid the recipe. However, if you’ve completed the 21-Day Clean Program and have learned that you do well with eggs, then this recipe is definitely for you.

Lemony Keto Pound Cake

Serves 14-16


● 5 eggs, at room temperature – this prevents the coconut oil from hardening once combined
● ½ – ¾ cup monk fruit, depending on how sweet you like it
● 1/3 cup melted coconut oil
● Juice of two small lemons
● 1 tsp vanilla extract
● Zest of 1 organic lemon
● 1 tablespoon unsweetened almond milk
● 2 cups almond flour
● 1/4 cup coconut flour
● 1 tablespoon baking powder
● 1/4 teaspoon fine sea salt or Himalayan salt


Preheat the oven to 350 degrees F. Line a 9-inch x 5-inch loaf pan with a piece of parchment paper. Spray the parchment paper lightly with coconut or avocado oil to make sure the pound cake doesn’t stick to the pan. Set aside and prepare ingredients.

In a medium mixing bowl, whisk together the eggs, monk fruit, coconut oil, lemon juice, vanilla extract, and lemon zest, and almond milk. Set aside.

In another large mixing bowl, combine the almond flour, coconut flour, baking powder, and salt. Stir until evenly combined.

Pour the liquid ingredients onto the dry ingredients while stirring. Stir until a consistent batter with no lumps. Let this mixture sit for a few minutes to allow the coconut flour to absorb the liquid.

Pour the batter into the loaf pan and transfer to the oven to bake for 10 minutes uncovered. After 10 minutes, cover the loaf pan with a loose piece of aluminum foil to avoid burning the top of the cake. Bake the cake, covered, for an additional 35-40 minutes (depending on the power of your oven), or until a toothpick inserted in the center comes out clean.

Allow the cake to cool in the pan for about 10-15 minutes before removing from the pan and transferring to a cooling rack. Enjoy slightly warm or room temperature (it’s even good cold straight out of the fridge). We love a slice of this cake with a warm cup of herbal tea in the evening or morning. Either way, this Lemony Keto Pound Cake is comforting, cozy, and delicious.

Note: If you want to freeze your cake to have it for later, simply cut the cake into slices and freeze in an airtight box. If you need to overlap the slices, place a piece of parchment paper between each slice so they don’t stick to each other. Whenever you’re ready, just take one slice out, let it defrost, and enjoy!
