Veggie-filled smoothies don’t always have to be green! We’ve created this carrot pineapple smoothie that is antioxidant-rich shake. The result is a beautiful orange color (with carrots as the vegetable source) and tropical flavor you’ll want to sip year round.

Carrots Improve Skin and Heart Health

Carrots are an excellent source of beta-carotene (carotene is Latin for carrot). The body converts beta-carotene in vitamin A which is important for eye health and skin – you’ll even see vitamin A content advertised on skin serums. The reason you’ll often hear vitamin A touted for its skin-saving abilities is that it helps prevent and heal damage from UV rays and other pollutants we’re exposed to daily. This helps keep wrinkles at bay and will give you a healthy glow when consumed regularly.

Vitamin A serves as an antioxidant throughout the body, reducing inflammation, killing free radicals, and helping prevent a slew of diseases. This antioxidant also works in partnership with vitamin E to help prevent oxidation of cholesterol in the bloodstream (chronic oxidation can lead to heart disease). It also helps fight oxidation in brain cells, helping to prevent dementia and slow cognitive aging.

This Smoothie is a Dream for Digestion

We’ve included both ginger and lemon, which not only adds a burst of flavor to the smoothie but also helps keep things moving in your body. If you’ve noticed skin issue like acne or have started to feel tired even with adequate rest, this can be a sign of digestive issues.

Ginger helps reduce inflammation in your digestive tract helping to heal any resulting side effects. It also contains prebiotics to help build the good bacteria in your gut. Lemon juice is rich in vitamin C which helps build the collagen in our body, hugely benefiting the skin, gut, and joints. Lemon also encourages the liver to produce bile, making sure digestion stays flowing when we eat.

Ingredients:

4 medium carrots
1/2 teaspoon ginger
1/2 teaspoon turmeric
1/2 lemon
1 cup pineapple
1 cup ice
1 cup coconut milk

Directions:

Step 1: Clean carrots and cut off stems. Peel ginger.

Step 2: Add all ingredients to a blender and blend on high until smooth.

Step 3: Serve immediately!
