While traditional bread loaves don’t make the cut during our 21-day Cleanse, we’ve created this paleo-friendly recipe. Once you have these staples on hand, throwing together a loaf is a quick process, so you can make it in a snap anytime cravings hit!
Almond flour
The bulk of the cleanse-friendly flour in this loaf comes from almonds. You can find almond flour in almost any grocery store these days. Almond flour also comes with many benefits, unlike traditional white flour. It’s high in protein and good-for-you monounsaturated fats. Both of these macronutrients help make this loaf heartier than traditional bread, so it will help satiate and keep you fuller longer. It’s the perfect protein-packed side to any of our delicious soup recipes! The almond flour in this recipe is also packed with vitamin E, manganese, and fiber.
Flax seeds
You’ll find flax seeds in many of our baked goods recipes since they make the perfect replacement for eggs. Eggs are commonly used in baked goods, as they act as an excellent binder. For some people, eggs can be an allergy, so we made this an egg-free recipe. When you combine ground flax with liquid and let it sit, it will form into a gel-like substance. This texture mimics eggs perfectly, helping to bind together ingredients.
Plus, flax seeds come with a slew of benefits for the body. Flax seeds are high in omega-3 fatty acids, which are excellent at fighting inflammation and reducing the risk for chronic illnesses. They are also high in fiber and phytosterols. Phytosterols are compounds that mimic the structure of cholesterol and help prevent the absorption of cholesterol by the intestine. This, in turn, helps lower LDL, or “bad,” cholesterol which lowers the risk for heart disease.
Psyllium husk
Psyllium husk may be one ingredient in this recipe that you haven’t heard of before. This supplement is a form of fiber made from ground-up seeds. It’s often used as a natural, mild laxative to help those struggling with constipation. Regularly consuming psyllium husk has been shown to improve heart and pancreatic health as well. Psyllium acts as a prebiotic – meaning it helps feed the healthy bacteria that line your gut. Maintaining healthy gut bacteria and overall digestive health is important for improving mood, immunity, preventing chronic illness, and many other functions of the body.
Ingredients: Dry:
1.5 cups almond flour
1/4 cup coconut flour
1/4 cup tapioca flour
1/3 cup ground flax seed
1/4 cup ground psyllium husk
2 teaspoons baking powder
1/2 teaspoon salt
Wet:
1 cup hot water
1/3 cup ghee (or coconut oil, if cleansing)
1 tablespoon apple cider vinegar
optional: 1 tablespoon maple syrup, if not cleansing
Directions:
Preheat oven to 400 degrees, and prep ingredients.
Add 1 cup hot water to the ground flaxseed in a small bowl. Stir, cover, and set the bowl aside for 10 minutes. While flaxseed absorbs water, combine remaining dry ingredients in a large bowl.
Line a loaf pan with parchment paper. Set aside. Next, add melted ghee, vinegar, and syrup to flaxseed mixture.
Add all wet ingredients to dry, and mix until combined thoroughly. Using your hands is the easiest way to combine ingredients. Once thoroughly combined, form dough into an oval shape and place in the loaf pan.
Flatten just enough for the dough to take-up most of the pan. Bake for 25-30 minutes, or until a toothpick comes out clean. Let the bread cool before cutting and serving.
