The word dalgona came from a South Korean street treat that was popular in the 70s and 80s. We wanted an updated version of dalgona matcha. We came up with one that is vegan, swaps out matcha for coffee, and a healthy, low-glycemic sweetener for regular sugar. Yes, that means you can even have it on the 21-Day Cleanse.
We love it so matcha
This whipped, fluffy drink is so much fun. It’s frothy, light and sweet. It’s traditionally made with two distinct layers, milk and froth. Our froth is made with matcha, as we love the amazing benefits of it. Matcha is full of L-theanine, which can help relieve stress and anxiety. It has a soothing effect, balancing out the energizing aspect of green tea.
L-theanine can also help with immunity – something we’re all hyper aware of now. Some studies show it is effective in helping fight of respiratory infections, but also the reduction of cortisol and better sleep it provides are excellent for healthy immune function.
Our matcha is ceremonial grade and organic. This means you get that really beautiful pure green color, not a muddy or brownish green. It’s made of the youngest leaves with no stems, and the texture is very smooth. The taste is better with ceremonial grade, too, it has a hint of natural sweetness.
Drain the aquafaba into a stainless steel bowl (save chickpeas for this chickpea scramble recipe). Using the electric mixer, beat aquafaba for about two minutes, or until it it turns opaque, has a glossy appearance, and forms a stiff peak.
In another bowl, add coconut sugar and hot water to dissolve the coconut sugar, and then whisk in the matcha. Depending on the type of matcha you are using, you might want to sift it before adding.
Slowly pour the matcha mixture into the aquafaba bowl, while mixing. Blend with the mixer together until combined.
Add ice to glasses and fill each with about a cup of almond milk. Add whipped dalgona matcha to the top, mixing just slightly with spoon or straw before enjoying.
