Our Chocolate Cookies are Free of Refined Sugar

Coconut palm sugar (made from the sap of a palm tree) is a cleanse-approved alternative to refined sugars and artificial sweeteners. It has a mild, sweet flavor making it a perfect replacement for sugar in baked goods. It is lower on the glycemic index than most sweeteners, meaning it doesn’t raise blood sugar as rapidly as other sugars. Coconut palm sugar also contains potassium which is important for fluid regulation and hydration. Be sure to buy pure coconut palm sugar, as some companies mix it with regular cane sugar.

Cinnamon in Our Chocolate Cookies for Healthy Blood Sugar Levels

While finding healthier sweeteners should be a priority for any treat, all sweeteners should only be consumed in moderation. When you do have sweet goodies like our chocolate cookies, pairing them with cinnamon helps to slow the absorption of sugar into the bloodstream by slowing down the breakdown of carbohydrates in the small intestine. Healthy Grain Free Chocolate Cookies with Cashew Butter

Ingredients

1 cup raw cashew butter
1 cup coconut palm sugar, plus more for topping
1/2 teaspoon cinnamon
1 1/2 tablespoons raw cacao powder
2 eggs (eggs are not approved on the Clean Program)
1 teaspoon baking soda
2 teaspoons vanilla

Instructions

Preheat oven to 350°F. Place all ingredients in a mixer or large bowl. Start mixing on low, slowly increasing speed until all ingredients are smooth and well-combined.

Line a baking sheet with parchment paper. Scoop heaping tablespoons of dough, and smooth between hands into even balls, keeping a couple inches of space between each ball of dough.

Use a fork to lightly press dough into flatter discs.

Sprinkle each cookie with more coconut palm sugar.

Bake cookies for 8-10 minutes. Let cool on a rack for 10 minutes before serving (if you can).
