As a reminder of the importance of eating the rainbow, we are bringing you this clean Buddha Bowl recipe. This is a great way to introduce cultured veggies with their amazing beneficial bacteria. Mix them in with fiber-rich kale and broccoli for a well rounded meal. Give it a try and let us know your favorite Buddha bowl additions and variations!
Serves: 2-4
Prep time: 30 minutes
Cooking time: 20-25 minutes
Ingredients:
1½ cups brown rice
1 head of broccoli, cut into small florets
½ cup kimchi, sauerkraut, or cultured vegetables
small handful of dulse, torn or chopped into smaller pieces
For the Kale Salad:
1 bunch of kale, stems removed, leaves torn into smaller pieces
1-2 tablespoons olive oil
pinch of sea salt
For the Carrot Salad:
1 cup of julienne carrots (1 large)
1 scallion, thinly sliced
2 teaspoons sesame seeds
1 tablespoon toasted sesame oil
2 teaspoons rice wine vinegar
For the Dressing:
3 tablespoons sesame oil
1 tablespoon toasted sesame oil
3 tablespoons coconut aminos
2 tablespoons rice wine vinegar
1 tablespoon freshly grated ginger
Directions:
Place the rice in a small pot along with 3 cups of cold water. Cover, bring the water to a boil, then lower the heat and gently simmer for 15 minutes, or until the water is almost fully absorbed. Turn off the heat and let the rice stand for 10 minutes.
Bring 8 cups of salted water to a boil then add the broccoli, submerge, then cook just until fork tender, about 3 minutes. Remove from the water and submerge in ice cold water to stop the cooking. Once cooled, set aside to drain.
Prep the kale then coat in olive oil and a sprinkle of sea salt. Massage for a few minutes to soften up the kale. Set aside.
Prep the carrots, toss gently, then set aside.
Once all the components are prepped and ready to serve, add 1½ cups of rice to 2 bowls then top with a scoop of kale salad, broccoli, and carrot salad.
Add a few sprinkles of dulse and a handful of fermented veggies.
Whisk the dressing to incorporate then drizzle over the entire bowl and enjoy!
