Vata smoothie with spiced sweet potato
Ingredients
1-1.5 cups unsweetened almond or coconut milk 1 small roasted Japanese sweet potato (discard the skin) 1 pitted Medjool date ¼ c walnuts 1 Clean 7 shake 1-inch piece fresh ginger, peeled 1/2 tsp cinnamon 1/4 tsp nutmeg 1/4 tsp cardamom Pinch of Himalayan salt
Directions
Place all ingredients in blender, and blend until smooth. It should be thick and creamy. For a thinner consistency, add additional nut milk or water.
Enjoy this vata smoothie from a glass or top with additional walnuts and enjoy out of a bowl like a parfait.
