This Magic Superfood Pie Is Perfect For Your Next Party

Spirulina grows naturally in mineral-rich bodies of water. It is a bacteria also knows as cyanobacterium, or more commonly referred to as blue-green algae. Spirulina has been consumed for thousands of years and was used regularly by the Aztecs. It’s rich in protein, B vitamins, and minerals like copper and iron.

Modern day stressors, low-quality food, and pollution are all examples of things that can cause free radicals and oxidative damage to our bodies. Spirulina, being rich in antioxidants can help fight this damage, in turn preventing chronic illness and premature aging. Specifically, Spirulina contains phycocyanin, a powerful phytonutrient that gives it its antioxidant power.

Matcha for Healthy Energy

Matcha gives this pie a unique flavor twist and a boost of nutrients. Matcha is a special type of green tea leaf that is grown under shade, then ground and consumed whole, rather than steeping the leaf in hot water. Since the entire leaf is consumed, this makes matcha far richer in antioxidants than traditional green tea. Specifically, matcha contains a type of antioxidant called catechins. Matcha has been linked to weight loss, increased focus, and a lowered risk for heart disease and Type 2 Diabetes.

Cacao is Super High in Antioxidants

Cacao gives the crust of this superfood pie a rich chocolatey flavor. Cacao is one of the most antioxidant-rich foods on the planet, with over forty times the antioxidant levels of blueberries. It is also the highest plant-based source of iron and more calcium than cow’s milk. This makes cacao an excellent choice for vegetarians and vegans in particular. On its own cacao is not sweet, but mixed with healthy sweeteners like coconut palm sugar, it tastes just as good as the sugar-laden chocolate we all love but comes with significant health benefits. Cacao is also rich in nutrients like magnesium, potassium, zinc, iron, and B vitamins.

Ingredients:

Crust:
1 cup almond flour
1/3 cup coconut flour
1/4 cup coconut sugar
3 tablespoon cacao
1/4 teaspoon salt
3/4 cup room temperature coconut oil (or ghee, if you aren’t cleansing)
1 teaspoon vanilla extract

Filling:
1/2 tablespoon matcha powder
1 cup coconut milk
1 cup cashews
1 avocado
1⁄3 cup coconut palm nectar (or maple syrup, if you aren’t cleansing)
Vanilla to taste
1 tablespoon spirulina
Optional: shredded coconut for topping

Directions:

Step 1: Preheat oven to 350 degrees. Combine dry crust ingredients with a whisk. Once dry ingredients are combined, stir in ghee or coconut oil. Cream together until everything is evenly combined.

Step 2: Using your fingers, press batter into an 8-inch springform pan. Be sure to press evenly into the pan. Bake at 350 for 8-10 minutes. Set aside to cool. While crust bakes, make the filling.

Step 3: Prep all filling ingredients and add into a food processor.

Step 4: Combine on high until filling is creamy and smooth.

Step 5: Pour filling over crust, optionally sprinkle over coconut shreds, and freeze for 60-90 minutes. Keep pie in the refrigerator or freezer when not eating.
