Pears are an excellent replacement and result in an equally tasty bread that serves as the perfect breakfast or dessert.
Why is pear bread such a good idea
Pears arerich in fiber, with just one medium pear containing six grams – about a quarter of the daily recommended amount. Adequate fiber intake with each meal will help you feel full longer and maintain healthy weight balance. This is especially important when eating foods that contain sugar since they can often lead to a blood sugar rush, often resulting in a crash later on. Fiber is also effective at decreasing LDL cholesterol, with a 10-gram per day increase being enough to have an impact on cholesterol. This helps lower the risk of cardiovascular disease and potentially increases longevity.
Pears are a good source of antioxidants, especiallyvitamin C. Vitamin C is crucial for cell repair and cell regeneration, which is why you’ll find it in so many skincare products. To get an added boost of these important phytonutrients, we recommend keeping the skin on before blending the pears, since this is where many of the nutrients are concentrated. In general, color (like the skin of the fruit) is a strong indicator of antioxidants, which is one reason why you regularly hear “eat the rainbow” as health advice.
Get the flax (and just the flax)
Flaxseeds are an important ingredient in this bread since they act as a binder to keep the dough together. We also love them because they add even more good-for-you fiber to this dish. Flaxseeds are high in omega-3 fatty acids, which help fight inflammation and improve heart health. Specifically, they are high in a type of omega-3 fatty acid called alpha-linolenic acid (ALA), which is mainly found in plant-based foods. ALA must be obtained through diet since the body cannot produce it on its own. For individuals who don’t eat fish, especially vegans and vegetarians, flaxseeds are an excellent way to improve heart health.
Ingredients:
2 cups gluten-free flour (check for cleanse-friendly ingredients)
2.5 cups pears (2-3 medium-sized pears)
3 tablespoons flaxseed
1/2 cup coconut palm sugar
3/4 cup ghee or coconut oil, melted
1 teaspoon vanilla extract
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon salt
Optional: 1 cup chopped walnuts
Directions:
Preheat your oven to 350 degrees. Remove stems and seeds from pears. Add pears, vanilla, and melted oil to the blender and blend into a puree.
If you have a powerful high-speed blender (like a Vitamix) or a food processor, you can add all of the remaining ingredients (except the walnuts) to the blender and blend until fully combined.* Then, fold in walnuts if using.
If you do not have a high-speed blender, proceed by mixing all dry ingredients in a large bowl. Then, add pear, ghee, and vanilla puree to dry ingredients and mix until thoroughly combined. Fold in walnuts.
Add the mixture to a greased, parchment-lined loaf pan. Bake for 40-50 minutes, or until a toothpick comes out clean. Let bread cool slightly before slicing and serving.
