Feel-Good Avocado Ice Cream Is A Luscious Treat

Nothing goes better with summer weather than cold, creamy ice cream. While ice cream may be a summertime norm, the main ingredient of this recipe might be something you haven’t tried! The mild flavor of avocado is complemented by the cacao and coconut milk. You’re left with a rich, chocolate, creamy avocado ice cream treat that you’d never guess was plant-based.

Why dairy-free can feel so good

During the 21-Day Cleanse, we remove dairy and sugar completely, since they cause adverse digestive reactions in so many people. Plus, both dairy and processed sugar can lead to weight gain, energy issues, and skin breakouts. Our version of ice cream is completely cleanse-approved and filled with good-for-you ingredients like avocados and raw cacao.

We are always a fan of avocados, but in particular during warmer months when we may find ourselves sweating more and risking dehydration if fluids and minerals aren’t watched closely. Avocados contain more potassium than bananas, which helps to regulate our fluids, decreases blood pressure, and decreases stress. It’s important to not only fill up on fluids like water and herbal teas but also take in adequate electrolytes like potassium. The fat in avocados will also help satiate, meaning you’ll be satisfied with less. Dessert can be a healthy part of any diet, especially when made with wholesome ingredients and eaten in moderation. You don’t even have to give up dessert during your 21-day cleanse!

Cacao – not just a fun word to say

The cacao not only adds a rich chocolate flavor but is also full of magnesium, often touted as the “relaxing” mineral. Adequate magnesium intake can help you rest better at night and decreases stress and anxiety. Cacao is also one of the richest sources of antioxidants, meaning a small amount goes a long way in fighting free radicals, preventing premature aging, increasing longevity, and improving overall health.

Ingredients:

8 ripe avocados
1 cup full-fat, canned coconut milk
1/3 cup raw, unsweetened cacao powder
1/3 cup maple syrup or coconut palm nectar, if cleansing
1 1/2 teaspoons vanilla
1/2 teaspoon salt
Optional: 3/4 cup dark chocolate chips or cacao nibs (check for added sugar if cleansing, or find a stevia-sweetened version)

Directions:

Step 1: Remove pits from avocados and scoop out avocado meat. Add to a food processor or blender.

Step 2: Add coconut milk, cacao powder, maple syrup, vanilla, and salt to the blender. Blend with the avocados until a thick, smooth texture is achieved. Taste, and add more cacao or maple syrup if a richer or sweeter flavor is desired.

Step 3: Pour mixture into a glass bread pan. Gently fold the chocolate chips or cacao nibs into the avocado ice cream, if using. Smooth out the top, cover the pan, and freeze for at least 2 hours (or overnight) before serving.

Step 4: Thaw slightly before serving.
